Super Green Wrap with Caviar d’Aubergines

Super Green Healthy Wrap with a surprisingly delectable condiment Baba Ganoush a.k.a. Caviar d’Aubergines!. Semi-Raw dish that bursts with all the natural flavors of the organic produce used.

Baba Ganoush is a thick puree of roasted eggplant a Middle-Eastern appetizer delicacy. It’s also popular in Paris as Caviar d’Aubergines because the locals believe it to be as delicious as the fish eggs!

I plan my weekly menu after seeing what’s fresh in the produce section and this organic eggplant was calling me real hard…it looked so fresh, I had to buy it! While I was driving back home, was thinking what should I make with this eggplant which is easy and simple…

Baba Ganoush fit the bill right as a tasty spread which is easy to make and flavor improves if made a day or two in advance.

This savory spread made with soaked walnuts instead of traditional tahini turned out to be healthily delicious! Got an idea to try it out in my green wrap and to my surprise collard greens and baba ganoush are perfectly compatible!

Baba Ganoush:

  • 1 fresh Eggplant
  • 1/2 handful soaked Walnuts
  • 2-3 cloves Garlic
  • half bunch flat- leaf Parsley
  • 2 tbsp freshly squeezed Lemon Juice
  • 1 tbsp EV Olive Oil
  • 1 tsp Paprika
  • Salt to taste

Roast the eggplant in the oven for about 20 -30 mins. Remove and let cool. Split the eggplant and scrape out the pulp. Puree the pulp along with all the ingredients mentioned above to thick spread consistency. Taste and season with more salt and lemon juice, if necessary.

Apply the spread generously on the collard leaf, add your favorite thinly sliced veggies sticks and roll it in a wrap and ENJOY!! For extra punch, you could flavor the veggies sticks with some lemon juice and Himalayan salt.

Eggplants belong to the group of vegetables called nightshade per Ayurveda. This group of vegetables induce a feeling of relaxation when eaten. They also tend to provide a balance by helping clear the stagnancy of eating excess animal products. Per Ayurveda, nightshade vegetables tend to aggravate vata related allergies when consumed on a regular basis. Vata dominant doshas need to exercise caution in consuming eggplants.

Traditionally this spread is eaten with crackers, sliced baguette, or toasted pita chips for dipping. Make life interesting and try it out on different things and who knows you can come with an amazing dish like mine …Collard Wrap with Baba Ganoush!!

Storage: It stays fresh in the refrigerator for up to a week
